1 cup Uncle Ben's Natural Selected Garlic and Butter Rice
4 skinless boneless chicken breasts
1/2 cup soy sauce
1 whole lime, juice and zest
1 tablespoons fresh ginger, finely chopped
2 tablespoons plus 1 tablespoon sesame oil, divided
1 red pepper, diced
3 green onions, cut into 2 inch pieces
1. Marinate chicken in soy sauce, lime juice and ginger for 30 minutes.
2. Prepare rice according to package directions.
3. Heat 2 tablespoons sesame oil in saute pan over medium-high heat and cook chicken. Remove chicken and set aside.
4. Add remaining 1 tablespoon of sesame oil and saute red pepper and green onions.
5. Serve chicken with rice; top chicken with pepper & onion sauce.
Cooking time: 20 minutes
