1 broiler-fryer chicken, cut in parts
1/2 cup buttermilk
1/2 cup packaged corn flake crumbs
1/2 cup flour
1 teaspoon salt
1 teaspoon poultry seasoning
4 tablespoons butter, melted
1. Remove skin from chicken and discard.
2. Dip chicken parts in buttermilk.
3. In shallow dish, mix together corn flake crumbs, flour, salt and poultry seasoning; add chicken, one piece at a time, dredging to coat.
4. Arrange chicken in single layer in well-buttered dish. Drizzle melted butter over chicken.
5. Place in 375F oven and bake about 45 minutes or until fork can be inserted in chicken with ease.
