1 Sanderson Farms® tray of Country Style Whole Cut-Up Chicken
Salt to taste
Ground black pepper to taste
1 cup chopped pecans
1/2 cup bread crumbs
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 1/2 teaspoon chopped fresh parsley
1/2 tablespoon honey
3/4 cup olive oil
3 tablespoons vegetable oil
1. Preheat oven to 350°F.
2. Season chicken with salt and black pepper.
3. Finely chop the pecans in a food processor.
4. In a small bowl, mix pecans, bread crumbs, salt, black pepper, parsley, honey and olive oil to make a paste.
5. Heat vegetable oil in 12-inch skillet over medium high heat.
6. Saute chicken until golden brown, about 5 minutes per side, in two batches.
7. Place chicken on a baking sheet and coat generously with the pecan mixture.
8. Bake in preheated 350°F oven 45 minutes or until chicken is to an internal temperature of 190°F.
