1 Sanderson Farms® Boneless, Skinless Chicken Breast Fillet, sliced in half horizontally to create two chicken breast fillets
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1/2 teaspoon Italian seasoning
1/8 teaspoon ground black pepper
3-(7inch) prepared pizza crusts
9 tablespoons no salt added tomato sauce, divided
3 pinches garlic powder, divided
3 pinches Italian seasoning, divided
3 tablespoons sliced black olives, drained and divided
3/4 cup shredded mozzarella cheese, divided
1. Mix olive oil, lemon juice, Italian seasoning and black pepper in a small bowl.
2. Place chicken breast fillets in a small sealable plastic bag. Pour olive oil mixture in bag with chicken. Mix well and seal. Refrigerate for 30 minutes.
3. Brush grill grate with oil.
4. Preheat grill for 10 minutes.
5. Grill chicken on one side for 5 minutes. Turn chicken over and grill for 5 more minutes or until internal temperature reaches 165°F.
6. Dice cooked chicken into 1/4 inch dices.
7. Top each pizza crust with the following ingredients: 3 tablespoons tomato sauce, a pinch of garlic powder, a pinch of Italian seasoning, 1/4 cup cooked chicken, 1 tablespoon black olives and 1/4 cup mozzarella cheese.
8. Place the three topped pizzas on the grill, cover grill and cook indirect for 6 minutes or until cheese is melted and pizza crusts are browned.
